The J. Moreau & Fils Estate, located in Chablis, France, is a family-owned vineyard dating back to 1814. Since then, several generations of winemakers from the Moreau and Cornu families have succeeded one another in managing this prestigious property. This renowned house, with a long history, produces fine and elegant wines, which are now appreciated and recognized globally. The Estate and its 5 houses form one of the largest vineyards in the region, sheltering 50 hectares of mature vines. The vines are cultivated using traditional methods, combining respect for the environment with modern techniques to achieve exceptional quality wines. The house produces quality Chardonnays, which are the signature of the estate. Each batch is matured without pressing, in order to preserve the integrity of aromas and distinctive flavors. Discovering the wine region of Chablis

Chablis is a historic town and wine region in NorthCentralFrance. It produces light, Dry white wines, renowned for their minerality and lively Acidity. AOC Chablis wines are produced exclusively from the Chardonnay grape. The wines of Chablis are made in a rather different style from those produced elsewhere in Burgundy.

They are drier and fresher, rather than heavier and more Aromatic. Most basic Chablis is fermented and aged in stainless steel, with the use of oak barrels being more common for the top wines, although large used barrels are more likely to be used than New ones, and the wines spend less time in them than in Côte d'Or. The town and its vineyards are located a considerable distance (over 100 kilometers) northwest of the main wine regions of Burgundy, from the Côte de Nuits to the Maconnais. They are actually closer to Sancerre (Loire) and Les Riceys (southern Champagne) and to the city of Paris.

The vermentino grape variety was widespread in Italy, Sardinia and Corsica. Today, Vermentino is grown in the regions bordering the Mediterranean, mainly in Provence (Côtes de Provence, Bellet), Corsica (Corse Calvi), Languedoc (Côtes du Roussillon, Costières de Nîmes) and the Rhône Valley (Côtes du Luberon). Because it ripens late, Vermentino requires a warm climate for its development and can only be grown in regions with good sun exposure. Conversely, cold or temperate climates do not allow it to ripen properly. Vermentino is only susceptible to powdery mildew. When vinified on its own, Vermentino produces a single-variety dry white wine that is light and full-bodied with a pale yellow color. It can also be blended with other grape varieties such as Ugni Blanc, Cinsault and Grenache, in which case its low acidity makes it light and fresh. Vermentino belongs to the grape varieties of Ajaccio, Corsica and Corbières. The aromas released by this variety are multiple. One can detect notes of fresh apple, green almond, sweet spices, hawthorn, ripe pear and fresh pineapple.
