This is where wine-making expertise combines with agricultural practices and local craftsmanship across 4 generations of vintners. The estate covers an area of 15 hectares. Its best vineyards are situated on the mountain side and are at an altitude of 300 to 550 meters. The terroirs recreate a landscape of hills and terraces. The vine is selected from a blend of the most well-known varieties from Languedoc-Roussillon - Grenache and Carignan - while Muscat is also used for making rosé wines. Château Saint-Roch's wine-making is environmentally friendly. Treatments are done using organic and natural products and soils are enriched through conscientious farming practices. The cellar is renovated and a new aging room is built to improve the quality of the wines. The range of wines produced by Château Saint-Roch includes red, rosé and white wines. Discovering the wine region of Maury

Maury is a town in the northern Roussillon region of southern France. Its name is best known as an appellation for the natural Sweet wines produced around the town, although in 2011 the separate AOC Maury Sec came into effect for Dry red wines, due to the recognition that a local wine industry based entirely on fortified wine was too narrowly focused. The natural sweet wines of Maury are mainly produced from the Grenache grapes (Grenache Noir, Grenache Blanc and Grenache Gris). They are produced in a style very similar to the sweet wines of Banyuls, 35 miles (57km) to the southeast, which also use Grenache.

The wines come in red, rosé and white, with the Color resulting from the rigorous winemaking techniques employed. In their youth, these wines are Tannic and intensely Fruity, but they become more flavourful and deeply coloured as they age. Maury Sec wines also focus on Grenache, although Mourvèdre, Syrah and Carignane are also allowed. Although still a small appellation - only 220 hectares were declared in 2014 - the wines have quickly gained a reputation for being among the best Full-bodied reds produced in France.

The word of the wine: Phenolic ripeness

A distinction is made between the ripeness of sugars and acids and the ripeness of tannins and other compounds such as anthocyanins and tannins, which will bring structure and colour. Grapes can be measured at 13° potential without having reached this phenolic maturity. Vinified at this stage, they will give hard, astringent wines, without charm.
