In 2015, there were just over 135,000 hectares of Vineyards in Australia. 30% of this vineyard was planted to Shiraz, 18% to Cabernet Sauvignon and 16% to Chardonnay. Merlot covers 6% and Sauvignon Blanc 5%.

It is a white grape variety, not to be confused with Sauvignon Gris and its pale yellow color, or with Cabernet Sauvignon which produces red wines. Particularly famous thanks to Sancerre, Sauvignon Blanc is cultivated as far as New Zealand, where it produces great wines whose reputation is well established.
