In this peaceful and wonderful atmosphere, the richness of the flavor of each variety can finally be better appreciated and understood, without human intervention. The quality of the winery's wines is due not only to nature but also to how they are cultivated. The owners of the estate, Jeff and Delphine Carrel, have worked closely with the community of local growers in order to better understand and exploit the terroir around the vineyard. They have also opted for sustainable, natural farming in their production. Which allows the vineyards to produce the tastiest and most aromatic organic wines. Domaine Jeff Carrel specializes in the production of fine, quality wines. The main varieties are Syrah, Grenache, Mourvèdre, and Carignan. The blending of grapes allows the creation of small, unique, and exceptional cuvees, which are the result of the long tradition and know-how of the vineyard. The winemakers are proud to present their wines to the world and to discuss with wine enthusiasts their methods and experiences with different wine styles. Discovering the wine region of Languedoc

Languedoc (formerly Coteaux du Languedoc) is a key appellation used in the Languedoc-Roussillon wine region of southern France. It covers Dry table wines of all three colors (red, white and rosé) from the entire region, but leaves Sweet and Sparkling wines to other more specialized appellations. About 75% of all Languedoc wines are red, with the remaining 25% split roughly down the middle between whites and rosés. The appellation covers most of the Languedoc region and almost a third of all the vineyards in France.

The typical Languedoc red wine is medium-bodied and Fruity. The best examples are slightly heavier and have darker, more savoury aromas, with notes of spice, undergrowth and leather. The Grape varieties used to make them are the classic southern French ones: Grenache, Syrah and Mourvèdre, often with a touch of Carignan or Cinsaut. The white wines of the appellation are made from Grenache Blanc, Clairette and Bourboulenc, with occasional use of Viognier, Marsanne and Roussanne from the Rhône Valley.

The word of the wine: Draft liquor (champagne)

After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).

Discover the grape variety: Cabernet franc

Cabernet Franc is one of the oldest red grape varieties in Bordeaux. The Libourne region is its terroir where it develops best. The terroirs of Saint-Emilion and Fronsac allow it to mature and develop its best range of aromas. It is also the majority in many blends. The very famous Château Cheval Blanc, for example, uses 60% Cabernet Franc. The wines produced with Cabernet Franc are medium in colour with fine tannins and subtle aromas of small red fruits and spices. When blended with Merlot and Cabernet Sauvignon, it brings complexity and a bouquet of aromas to the wine. It produces fruity wines that can be drunk quite quickly, but whose great vintages can be kept for a long time. It is an earlier grape variety than Cabernet Sauvignon, which means that it is planted as far north as the Loire Valley. In Anjou, it is also used to make sweet rosé wines. Cabernet Franc is now used in some twenty countries in Europe and throughout the world.
