The wine region of Colli d'Imola
DOC in Emilia-Romagna southwest of Imola (Bologna), pre-Apennine clay-limestone hills. Sangiovese is the signature red (≥85% in varietal): full-bodied and fruity with red cherry, plum, violet, herbs and spice, firm tannins and lively acidity; Riserva requires 18 months ageing. Cabernet Sauvignon and Barbera add structure. Trebbiano and Chardonnay provide easy-drinking whites.

Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid. Some producers or wineries refuse this operation by "blocking the malo" (by cold and adding SO2) to keep a maximum of acidity which carries the aromas and accentuates the sensation of freshness.
