Discovering the wine region of Côtes du Jura

Regional Jura AOC, atypical wines of strong identity. Fresh, straight Chardonnay as classic white (white flowers, citrus, apple). Savagnin under flor, oxidative signature: unique whites with notes of fresh walnut, curry, honey, overripe apple and toasted almond — the base of the legendary Vin Jaune aged 6 years in cask. Light-ruby, fruity Poulsard (strawberry, raspberry), tannic, animal Trousseau as reds.

Specialities: sweet Vin de Paille, Crémant du Jura. ~551 ha on marl-limestone.

Vivid, structured whites with a golden robe, taut mouthfeel and sharp acidity, with aromas of apple, citrus, green walnut, curry, spices and intense oxidative notes (vin jaune aged under a yeast veil) evoking walnut, roasted almond and the distinctive "goût de jaune". The absolute star of Château-Chalon AOC, Arbois AOC, l'Étoile AOC and Côtes du Jura AOC. A very ancient Jurassian autochthon, probable ancestor of many European varieties.
