The wine region of Port Phillip

Port Phillip is a qualitatively significant wine-producing zone in the Australian state of Victoria. Named for the bay it surrounds, it benefits both from its location near the state capital Melbourne and the high quality of its Terroir, which produces some of Australia's most important wines, Particularly in the Yarra Valley and Mornington Peninsula GIs (Geographical Indications). Victoria is a relatively small but important Australian wine state. Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
