The Enderle & Moll estate is a renowned winery located in the picturesque region of Baden, Germany. Founded in 2007 by two passionate winemakers, Sven Enderle and Florian Moll, this estate revolutionized the German wine world by pushing the boundaries of traditional viticulture and emphasizing natural and minimalist methods. Covering an area of 5 hectares, the Enderle & Moll estate is nestled in the beautiful Elz valley, offering a temperate climate, ideal for vineyards. The soil is a rich combination of sandstone and shale, which imparts unique aromas and marked minerality to the wines produced here. The vines are maintained with the utmost care, without the use of chemical products. Instead, Enderle and Moll use organic composts and biodynamic herb preparations to nourish and strengthen the vines, a commitment that reflects their deep respect for nature and sustainability. The estate's main production is Pinot Noir, followed by smaller parts of Pinot Blanc, Pinot Gris, and Muscat. The wines are all made according to natural winemaking practices, including spontaneous fermentation with native yeasts. Baden is the southernmost of Germany's 13 official wine regions. It is also the warmest. Its relatively sunny, DryClimate permits the production of good-quality Spätburgunder (Pinot Noir) and ripe, relatively Full-bodied">Full-bodied examples of Grauburgunder (Pinot Gris) and Weissburgunder (Pinot Blanc). These are often made in oaked styles.

Baden is classified as zone B under the European Union's Vineyard">Vineyard climate classification. Every other German region is in chilly Zone A. Baden is, unusually for Germany, best known for its red wines, However its whites account for the majority of its output. Pinot Noir rules the vineyards here.

For every acre of Riesling (the dominant variety in almost every other German region), there are five of Pinot Noir. Auxerrois is a white grape variety native to Lorraine, which is also found in Alsace and in the Loire Valley, where it took off in 1950. Its name comes from the nurseries in Auxerre where it found refuge during the Second World War. Often called Pinot Auxerrois, it is part of the Moselle, Alsace and Côtes-de-Toul AOC grape varieties.
