Structured and elegant age-worthy reds with a sustained ruby robe, fine tannins and an ample palate with fresh acidity, signature aromas of red fruits (cherry, raspberry), spices, garrigue and floral notes (violet). Distinctive alpine profile. Considered extinct until its recent rediscovery, grown by a handful of passionate winemakers in Lavaux for niche cuvées. The wine region of Australie du Sud

Cradle of the great Australian Shiraz: powerful, sun-drenched reds with notes of blackberry, candied plum, pepper, chocolate and eucalyptus, ample tannins and vibrant fruit (Barossa, McLaren Vale). Firm, minty Cabernet Sauvignon on Coonawarra (terra rossa). Dry, lemony Riesling from Clare and Eden Valley, straight and taut. Fresh Sauvignon and Chardonnay from Adelaide Hills.

The word of the wine: Olfaction

Perception of odours and aromas by the olfactory bulb. Retroolfaction is the same phenomenon inside the mouth via the retronasal route.
