The vineyard, which spans about 8 hectares, is nestled amongst green hills and benefits from a climate ideally suited to wine cultivation. The Plesivica region is known for its cool, humid climate, similar to that of Champagne in France. This makes it an ideal place to produce high-quality sparkling wines. Recognized for its respect for traditions, the Tomac Estate prioritizes the traditional method, using winemaking techniques inherited from previous generations, including the use of large wooden winemaking vats and centuries-old oak barrels for ageing the wines. The winemaking philosophy of the Tomac Estate is based on respect for the land and the vines. Here, the emphasis is on the production of authentic and natural wines, which express their original terroir. The estate is particularly famous for its Riesling, recognized for its purity and depth, as well as for its vintage sparkling wine, produced according to the traditional Champagne method. This estate is also unique in its use of the amphora, an ancestral winemaking tradition dating back more than 2000 years. The Tomac family was one of the first in Croatia to revive this tradition, allowing the grapes to ferment naturally in these large earthenware jars, offering an authentic and unique expression of the grape variety and terroir.
