Also made as expressive rosés and ice wines (Frontenac Gris). An extremely cold-hardy interspecific variety (down to -35°C on the vine), producing wines in cold US states (Minnesota, Wisconsin, Vermont) and Canada (Quebec). The wine region of San Severo
First DOC of Puglia (1968) in the northern Capitanata, Tavoliere plain around San Severo, alluvial and calcareous soils. Bombino Bianco as the signature white (40–60%) blended with Trebbiano Toscano: dry and light with delicate citrus, herbs and a subtle mineral touch, preserved acidity and low alcohol — ideal as frizzante and spumante. Malvasia del Chianti and Verdeca as complements. Montepulciano and Sangiovese as soft, fruity reds.

Fleshy, jammy Primitivo (= Zinfandel) with notes of black cherry, plum, chocolate and spices, powerful alcohol and melted tannins, a star in Primitivo di Manduria. The word of the wine: Maceration
Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
