American, resulting from a natural cross between taylor (Vitis Labrusca x Vitis Riparia) and Vitis Riparia, the seeds of the taylor then sown in 1869 by Otto Wasserzicher in Nauvoo, Illinois. Noah has been used extensively as a progenitor by hybridizers such as Baco, Bertille-Seyve, Castel, Gaillard and Seibel, the best known being baco blanc or baco 22A (folle blanche x Noah). The word of the wine: Cryo-extraction

This technique was very popular at the end of the 80's in Sauternes, a little less so now. The grapes are frozen before pressing, and the water transformed into ice remains in the marc, only the sugar flows out. As with the concentrators, the "cryo" can also increase bad taste and greenness.

Specifically I have been enjoying Cariñena from Priorat and Rioja, plus Garnachas – white, red and hairy – from Terra Alta, Rioja and Gredos, as well as Greek Xinomavro from Naoussa and Xarel.lo from Catalunya. Starting in 2015, the first years were friendly, loose affairs and took place inside the church but interest from those in the region (as well with sommeliers and the regional ...
