The Paco & Lola Estate is an emblematic winery of the Rías Baixas region, in the northwest of Spain. Following the centuries-old history of Galician wines, this estate was established in 2005 by a cooperative of passionate viticulturists who shared a common vision for quality wine. They joined their knowledge and skills to form what has now become one of the largest bodegas in the region. The estate is well-known for its white wines, particularly its Albariño, which perfectly reflects the rich granitic terroir of the region. These wines are marked by a bracing freshness and great elegance, with flavors of white fruit and citrus complemented by a subtle minerality. One of the distinguishing features of the Paco & Lola Estate is its commitment to sustainable development. The estate is certified for its environmentally friendly viticulture, using organic techniques and a non-invasive approach in the winery. The main goal is to preserve the purity of the grape and respect the integrity of the ecosystem. The estate spans approximately 200 hectares of vineyards, divided into more than 1800 plots that the viticulturists affectionately call "honorable". The name comes from the fact that each plot is treated as an individual with personalized care. Not only does Paco & Lola Estate produce exceptional wines, but they also offer tours of their vineyard and winery to visitors. These tours allow wine enthusiasts to familiarize themselves with the winemaking process, explore the vast vineyards, and of course, taste the exquisite wines of the estate. The visual identity of Paco & Lola Estate is as distinctive as its wines.

The word of the wine: Chaptalization

The addition of sugar at the time of fermentation of the must, an ancient practice, but theorized by Jean-Antoine Chaptal at the dawn of the 19th century. The sugar is transformed into alcohol and allows the natural degree of the wine to be raised in a weak or cold year, or - more questionably - when the winegrower has a harvest that is too large to obtain good maturity.
