Maipo Valley is one of Chile's most important wine-producing regions. Located just South of the capital, Central-valley/maipo-valley/santiago">Santiago, Maipo Valley is home to some of the country's most prestigious wines. The Central Valley (El Valle Central) of Chile is one of the most important wine-producing areas in South America in terms of Volume. Period during which a wine is kept in a cellar where it goes through different phases of evolution of its aromatic range and a maturation of its constituents (evolution of the colour, refining of the tannins, harmonization of the different flavours, etc.). The wine evolves better and less quickly in large containers, whereas it deteriorates prematurely in half-bottles.
