The wine region of Chalkidiki

The wine region of Chalkidiki is located in the region of Macedonia of Greece. Wineries and vineyards like the Domaine Tsantali or the Domaine Claudia Papayianni produce mainly wines white, red and pink. The most planted grape varieties in the region of Chalkidiki are Cabernet-Sauvignon, Merlot and Assyrtiko, they are then used in wines in blends or as a single variety. Must obtained in excess of the 2 550 litres authorised for a weight of 4 000 kilos of grapes. The first 2 050 litres constitute the cuvée and the next 500 litres the taille. The rebêche represents 1 to 3 % of the total volume and must be distilled or used to make ratafia.
