First DOC of Puglia (1968) in the northern Capitanata, Tavoliere plain around San Severo, alluvial and calcareous soils. Bombino Bianco as the signature white (40–60%) blended with Trebbiano Toscano: dry and light with delicate citrus, herbs and a subtle mineral touch, preserved acidity and low alcohol — ideal as frizzante and spumante. Malvasia del Chianti and Verdeca as complements. Montepulciano and Sangiovese as soft, fruity reds.

Fleshy, jammy Primitivo (= Zinfandel) with notes of black cherry, plum, chocolate and spices, powerful alcohol and melted tannins, a star in Primitivo di Manduria. Deep, structured Negroamaro (black-bitter) with a bitter finish in Salice Salentino. Structured Nero di Troia, spicy Susumaniello.
