The wine region of Epanomi

Central Macedonian IGP south-west of Thessaloniki (peninsula surrounded by sea on three sides, sandy clay soils, maritime microclimate preserving aromas, IGP 1989): Malagousia is the signature king white rescued from extinction by Gerovassiliou — opulent aromatic profile with white flowers, tropical peach-apricot and citrus, full palate with marine minerality. Assyrtiko, Chardonnay and Sauvignon as whites, Syrah as red. Greece's most acclaimed IGP.

Large wine region of northern Greece, 1st by volume, altitude vineyards tempered by mountain massifs. Signature Xinomavro ("acid black") as king grape: structured, complex reds with signature notes of tart cherry, dried tomato, black olive, Mediterranean herbs, leather and a mineral touch, firm tannins and long ageing — compared to Nebbiolo. Stars in PDO Naoussa, Amyndeon, Goumenissa and Rapsani. Also lively, mineral Assyrtiko, aromatic Malagousia as whites.

The word of the wine: Sulphur

An antiseptic and antioxidant substance known since antiquity, probably already used by the Romans. But it was only in modern times that its use was rediscovered. It will allow a better conservation of the wine and thus favour its export. Sulphur also gave the 18th century winegrower the possibility of extending the maceration period without fearing that the wine would turn sour and thus go from dark rosé wines to the red wines of today. Excessive sulphur, on the other hand, kills happiness, paralysing the aromas and causing headaches.
