The wine region of Barossa

Barossa is one of the six wine-producing zones of SouthAustralia, and arguably the most recognized name in the Australian wine industry. Barossa wines have attracted more international awards than any other region in the country. It is divided into two sections: the western Barossa Valley (effectively the Warmer valley floor) and on the eastern side the cooler, higher altitude Eden Valley, both of which have a distinct Geographical Indication (GI) formalized in 1997. The word of the wine: Maturing (champagne)

After riddling, the bottles are stored on "point", upside down, with the neck of one bottle in the bottom of the other. The duration of this maturation is very important: in contact with the dead yeasts, the wine takes on subtle aromas and gains in roundness and fatness. A brut without year must remain at least 15 months in the cellar after bottling, a vintage 36 months.
