The Gilles Bouton & Sons Estate is a family-run winery nestled in the heart of Burgundy, in the wine-growing region of the Côte de Beaune in France. It sprawls across nearly 15 hectares, with vines proudly perched on gentle slopes, offering a visual spectacle as impressive as the quality of wines produced here. The terroir is exclusively made up of prestigious vineyards with renowned appellations: Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Bourgogne. Convinced of the importance of environmentally respectful viticulture, the Gilles Bouton & Sons Estate practices sustainable farming to preserve the richness and diversity of the terroir. This involves practices such as de-budding, which involves removing excess buds to keep only those that will produce the best grapes, or green harvesting in order to limit the yield of the vine and obtain higher quality fruits. Once the grapes are hand-picked, the arduous process of winemaking begins; marked by meticulous berry selection, oak barrel aging, and slow, controlled fermentation. This attention to detail is perceptible in every drop of the estate's wines, which express the complexity and balance inherent in their terroir of origin. The estate boasts a varied range of wines, from brilliant and complex whites, made from Chardonnay grapes, to rich and full-bodied reds, produced from Pinot Noir. These wines have a strong identity, where fruit is harmonious with a subtle mineral note attesting to the typical limestone soil of the Côte de Beaune.
