The wine region of Quer&eacutetaro

Wine state of central Mexico, high-altitude vineyards (1,800-2,000 m), strong thermal amplitudes. National leader in traditional-method sparklings with notes of white apple, citrus, white flowers and a brioche touch, fine bubbles and fresh palate. Supple Merlot reds (plum, cherry), solar Syrah (blackberry, pepper), dense Malbec, accessible Tempranillo. Full Chardonnay whites, zesty Sauvignon, straight Macabeo.

The word of the wine: Extraction

All the methods (pumping over, punching down) that allow the colour and tannins to be extracted from the grape skin during maceration, before fermentation begins. It is also possible to macerate after fermentation, but gently, so as not to extract the tannins from the seeds, which are greener. Because of its solvent power, alcohol favours extraction.
