Noah has been used extensively as a progenitor by hybridizers such as Baco, Bertille-Seyve, Castel, Gaillard and Seibel, the best known being baco blanc or baco 22A (folle blanche x Noah). In France, it is one of the six hybrids prohibited since 1935 (included in European regulations): clinton, herbemont, isabelle, jacquez, Noah and othello. Today, it has practically disappeared and can sometimes be found in private homes established in vineyards.

After riddling, the bottles are stored on "point", upside down, with the neck of one bottle in the bottom of the other. The duration of this maturation is very important: in contact with the dead yeasts, the wine takes on subtle aromas and gains in roundness and fatness. A brut without year must remain at least 15 months in the cellar after bottling, a vintage 36 months.
