Discover the grape variety: Panse précoce

Table grape with long bunches and thin-skinned golden berries with juicy flesh, a sweet and fresh flavour. Very early-ripening, mainly intended for fresh consumption at the start of the season. Grown in the Mediterranean for fresh consumption, appreciated for its early maturity and attractive table appearance, marking the first summer market stalls. The wine region of Chalkidiki

PGI of Central Macedonia (Greece) on the three-fingered peninsula south-east of Thessaloniki, Mediterranean climate tempered by sea breezes, limestone and schistose soils. Xinomavro is the flagship red of Macedonia: structured and taut with notes of black cherry, dried tomato, olive, herbs, undergrowth and a spicy touch, firm tannins and vivid acidity — compared to Nebbiolo. Fruity Limnio and Cabernet as complements. Saline Assyrtiko in whites.

The wine region of Macedonia

Large wine region of northern Greece, 1st by volume, altitude vineyards tempered by mountain massifs. Signature Xinomavro ("acid black") as king grape: structured, complex reds with signature notes of tart cherry, dried tomato, black olive, Mediterranean herbs, leather and a mineral touch, firm tannins and long ageing — compared to Nebbiolo. Stars in PDO Naoussa, Amyndeon, Goumenissa and Rapsani. Also lively, mineral Assyrtiko, aromatic Malagousia as whites.

The word of the wine: Cryo-extraction

This technique was very popular at the end of the 80's in Sauternes, a little less so now. The grapes are frozen before pressing, and the water transformed into ice remains in the marc, only the sugar flows out. As with the concentrators, the "cryo" can also increase bad taste and greenness.
