Pinot Gris is a grey grape variety mutated from Pinot Noir. It has its origins in Burgundy, where it is called pinot-beurot in reference to the colour of the grey robes worn by the monks of the region. Cultivated in the 19th century in all the northern vineyards, this black grape variety has largely regressed since. Very present in the Marne valley, it constitutes a third of the vineyards in Champagne, alongside pinot noir and chardonnay with which it is often blended. It brings roundness and red and yellow fruit aromas to champagnes.
