Made as dry (Trocken, Alsace), off-dry (Kabinett, Spätlese) and sweet (Auslese, Beerenauslese, Trockenbeerenauslese, late harvest). Star of the Moselle, Rheingau, Alsace AOC and Wachau. Island south of Adelaide (maritime climate, summer ~25 C, south-east winds from the Southern Ocean, sandy-clay soils on limestone): Shiraz signature red (~36%) — well-tempered with spiced berries and fine structure. Cabernet Sauvignon (~31%) with cool-climate finesse, notes of cherry, dark berries and spices. Chardonnay (~7%) with preserved freshness. Crisp Sauvignon Blanc.
