Our 6 hectares of vineyards extend in one piece over beautiful hills and two cooler valleys, protected to the north by hectares of green and white oaks. From the top of our hills we can see the shimmering Mediterranean Sea in the distance under the sun. When the weather is clear, the Pyrenees range stands out sharply and the Canigou dominates over the entire plain of Roussillon and Languedoc. Herbs and flowers scent our vineyards, and the various tree species that border them shelter a lively fauna. It is in this biodiversity that we seek harmony. Old gnarled goblets of Carignan and Cinsault, young dynamic Grenache, disciplined Mourvèdre and rebellious Syrah perfectly marry the curves of our hills. On this schist terroir, the grapes combine strength and freshness, the wines express themselves deeply but elegantly.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
