Pink selection made in Brazil, following a natural coloured mutation of the italia, discovered in 1981 by San Giorgio Jonico. Since 24.08.2009, it is registered in the Official Catalogue of table grape varieties, list A1. In Italy, a more colourful mutation of the Rubi was discovered, called benitaka, which is more uniform in berry colour and ripens about a week earlier. The black brasil variety, which can be found in Brazil, is said to be a natural mutation of benitaka. Finally, Rubi should not be confused with ruby seedless, also a pink apyrene grape.

The wine region of Valdepeñas is located in the region of Castille of Spain. Wineries and vineyards like the Domaine Corrales Espinosa or the Domaine Corcovo - Megía e Hijos produce mainly wines red, white and pink. This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
