The wine region of Pergola
Recent DOC (2010) in the Marches, in the Pesarese hills around Pergola. Aleatico — locally known as Vernaccia rossa di Pergola — is the aromatic native red signature: bright ruby, intensely perfumed with rose, violet, crushed strawberry, cherry and a spiced-musky note, supple tannins and a round finish. Vinified dry, passito or dolce. Cultivated here since the 13th century.
The wine region of Marche
Italian star of Verdicchio: exceptional age-worthy whites, straight and mineral with signature notes of green almond, lemon, green apple, dry herbs and a slightly bitter finish. Two DOCGs: Castelli di Jesi (coastal, airy) and Matelica (inland, more concentrated). Mediterranean reds: fleshy Montepulciano in Rosso Conero near Ancona, supple Sangiovese. Also fresh Pecorino and Passerina.
The word of the wine: Reduction
A physiological and chemical phenomenon that occurs in wine in the absence of oxygen. The smell of reduction is characterized by animal and sometimes fetid notes that disappear in principle with aeration. It is recommended to decant reduced wines.
