Vinified as light, gulpable reds (Bardolino DOC, Valpolicella DOC), powerful and concentrated through appassimento (Amarone della Valpolicella DOCG) and sweet (Recioto della Valpolicella DOCG). An autochthonous Venetian variety from Lake Garda and the Valpolicella.

The wine region of Amarone della Valpolicella Classico

Dry, powerful style of Valpolicella Classico (Fumane, Marano, Negrar, San Pietro, Sant'Ambrogio) via appassimento: Corvina (45-95%), Corvinone (≤50%) and Rondinella (5-30%) grapes dried ~120 days, losing 30-45% weight. Intense, full-bodied reds (≥15% abv) with dried fruit, candied black cherry, tobacco, spice, chocolate and leather, ample tannins and long ageing. DOCG since 2010, Venetian icon of concentration through dessication.

World star of Prosecco: fresh, light Glera sparklers with notes of pear, green apple and white flowers, fruity, convivial bubbles. Veronese reds from Corvina and Rondinella: light, crisp Bardolino, fruity Valpolicella, opulent, concentrated Amarone DOCG (black cherry, chocolate, raisin) from dried grapes. Mineral, almondy Soave (Garganega) whites, fresh Pinot Grigio. 97,500 ha, Italy's largest production.
