Vinified as light, gulpable reds (Bardolino DOC, Valpolicella DOC), powerful and concentrated through appassimento (Amarone della Valpolicella DOCG) and sweet (Recioto della Valpolicella DOCG). Dry, powerful style of Valpolicella Classico (Fumane, Marano, Negrar, San Pietro, Sant'Ambrogio) via appassimento: Corvina (45-95%), Corvinone (≤50%) and Rondinella (5-30%) grapes dried ~120 days, losing 30-45% weight. Intense, full-bodied reds (≥15% abv) with dried fruit, candied black cherry, tobacco, spice, chocolate and leather, ample tannins and long ageing. DOCG since 2010, Venetian icon of concentration through dessication.
