The wine region of Burgenland
Burgenland is a large wine-producing region on the eastern border of Austria. Despite the country's image as the producer of some of the world's finest white wines, Austria is also home to a thriving red wine culture: Burgenland, with its sunny, continental summers, is the country's key red wine region, with its wines based mainly on the Blaufränkisch and Zweigelt grape varieties. Sweet, botrytized wines are also a specialty of the region, particularly in the Terroir surrounding the Neusiedlersee lake. The word of the wine: Draft liquor (champagne)
After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).
