The wine region of Bianchello del Metauro
DOC of Le Marche (1969) in the lower Metauro valley between the Adriatic and the Cesane mountains (Pesaro-Urbino), hills at 80–350 m, ventilated by Bora and Sirocco. Exclusive signature Bianchello (Biancame, ≥95%): dry and crisp with citrus, green apple, white flowers, almond and a saline mineral touch, lively acidity and a typically slightly bitter finish. Superiore mention for more structured whites. The "warriors' wine" of the Metauro, excellent with grilled fish and antipasti.
The wine region of Marche
Italian star of Verdicchio: exceptional age-worthy whites, straight and mineral with signature notes of green almond, lemon, green apple, dry herbs and a slightly bitter finish. Two DOCGs: Castelli di Jesi (coastal, airy) and Matelica (inland, more concentrated). Mediterranean reds: fleshy Montepulciano in Rosso Conero near Ancona, supple Sangiovese. Also fresh Pecorino and Passerina.
The word of the wine: Sorting
Action which consists in removing the bad grains, not ripe or affected by the rot. We often use vibrating sorting tables which, by shaking, make the impurities fall to the ground. In the case of sweet wines, we speak of harvesting by successive selections, in several passages, to select the very ripe grapes each time.
