Supple, fruity reds with a clear ruby colour, silky tannins and airy palate with preserved acidity, showing signature aromas of red fruits (cherry, raspberry, strawberry), gentle spices and fresh floral notes. Elegant mountain profile for early drinking. Star of the Sierra de Salamanca DO, a typical expression of the north-west Iberian Peninsula, also present in Beira Interior and the Portuguese Douro. Native Iberian black variety from Salamanca.

The wine region of Vully

Smallest wine region in Switzerland (~150 ha), only intercantonal AOC Vaud-Fribourg, north-west shores of Lake Morat. Signature Chasselas as king white: fine and delicate with white flowers, citrus, green apple, sweet almond and a lakeside mineral touch, taut refreshing palate — quintessential Swiss aperitif. Aerial Pinot Noir (cherry, raspberry), supple Gamay, floral Müller-Thurgau, aromatic Traminer, local Freiburger specialty. Chiselled wines.


The wine region of Neuchâtel

Swiss vineyard on the western shore of the lake, 606 ha in the Three Lakes region. Signature Pinot Noir (55% of the vineyard, the local prince): fine, fresh reds with notes of cherry, raspberry, undergrowth and sweet spices, silky tannins. Specialty invented here: Œil-de-Perdrix, a delicate Pinot Noir rosé with salmon hues. Lively, mineral Chasselas (citrus, flint) in white, including the identity-marking Non-Filtré primeur.

The word of the wine: Bordeaux barrel

Barrels of 220 to 225 litres. The toasting of the barrel to bend the staves (curved boards used to make the barrels) can vary according to the coopers and the demand. A gentle and slow toasting has little effect on the aromas. On the other hand, a strong toasting gives aromas of coffee or cocoa which will influence the taste of the wine. A wine barrel has already been aged for a year and has less impact on the wine than a new barrel.
