The Domaine des Aubuisieres - Bernard Fouquet is a 12-hectare vineyard located on the well-exposed slopes of Vouvray, a town in the Centre-Val de Loire region of France. The site is renowned for its excellently produced grape varieties, including the famous Les Chanteaux Vouvray cuvee, which has won several awards among the appellation-rated white wines. The vineyard has been operated for over 40 years by the Fouquet family, who contribute to making the Aubuisieres cellar a place for the production of exceptional quality wines. At the heart of the vineyard, the operators apply a method of cultivation that respects nature and the environment, combining sustainably modern practices. The Fouquets dedicate themselves to the use of organic methods, such as the use of homemade compost, not forgetting the introduction of organic matter for the mix of mineral and organic subsidies, which reduces the input of fertilizer. The vineyards are spread out and inter-connected by drainage and water reserve networks to reduce the impact of climate variations. The aim is to improve their productivity as well as the quality and complexity of the wines produced. Special attention is paid to the method of winemaking, with maturing in round tanks limiting cellar interventions. Their winemaking is done in barrels, late and aged under wood, which give the wines rich and complex qualities. The vines are located at an altitude of 400 meters and benefit from richly enriched limestone soils, which help to produce dry white wines. Several grape varieties are present, including the sharp and fruity Chenin Blanc, which represents 95% of the plantings. They also produce champenoise method wines, which are of great finesse and require more cellar work than their ordinary wines. The Domaine des Aubuisieres - Bernard Fouquet produces quality wines, some of which are award-winning, and a total of 18 cuvees ranging from sparkling wine to liqueur. This estate is one of the benchmarks for dry white wines from Vouvray.
