Flagship Languedoc sparkling AOC (1990) in traditional method: signature blend of Chardonnay and Chenin (≤90%, Chenin 20-40%) complemented by Mauzac Blanc and Pinot Noir in white and rosé — fine, persistent bubbles, pale robe with green hints, signature aromas of apple, brioche, hazelnut from Chardonnay, red fruits from Pinot, chiselled freshness and minerality. 15-month minimum lees ageing, finesse compared to Champagne.

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault.
