Discover the grape variety: Cabernet franc

Cabernet Franc is one of the oldest red grape varieties in Bordeaux. The Libourne region is its terroir where it develops best. The terroirs of Saint-Emilion and Fronsac allow it to mature and develop its best range of aromas. It is also the majority in many blends. The very famous Château Cheval Blanc, for example, uses 60% Cabernet Franc. The wines produced with Cabernet Franc are medium in colour with fine tannins and subtle aromas of small red fruits and spices. When blended with Merlot and Cabernet Sauvignon, it brings complexity and a bouquet of aromas to the wine. It produces fruity wines that can be drunk quite quickly, but whose great vintages can be kept for a long time. It is an earlier grape variety than Cabernet Sauvignon, which means that it is planted as far north as the Loire Valley. In Anjou, it is also used to make sweet rosé wines. Cabernet Franc is now used in some twenty countries in Europe and throughout the world.

Sarah Jane Evans MW: My top 10 Spanish fine wines of 2021

In a year when travel was almost impossible, wine has been a fine companion. In terms of varieties I have been drinking a vinous A to Z: everything from Albillo (Cebreros) to Zibibbo (Pantelleria, Italy). Specifically I have been enjoying Cariñena from Priorat and Rioja, plus Garnachas – white, red and hairy – from Terra Alta, Rioja and Gredos, as well as Greek Xinomavro from Naoussa and Xarel.lo from Catalunya. In recent years, more and more people have been paying attention to Uruguay’s wine scene thanks to the distinctive identity of its coastal regions, which are swept by winds from the Atlantic Ocean and the Río de la Plata. The country’s proximity to the ocean and one of the largest rivers on the planet means that the vintage effect is quite prominent here. Each harvest depends on the rainfall, sun and strength of the winds experienced that year. Today, Uruguay has around 5,966ha under vine distri ...

“Origen 1989” by Bodega el Lomo is a wine made from the certified parcel of, “Los Laureles”, a 12ha vineyard at 600m of altitude that holds centenary bush vines. It’s the first wine certified under this new system, having just arrived to market this month with others to come in the near future. While the DO Islas Canarias covers the entire territory of these eight Spanish islands off the western coast of Africa, there are 10 other DOs that govern the wines of certai ...

The word of the wine: Extraction

All the methods (pumping over, punching down) that allow the colour and tannins to be extracted from the grape skin during maceration, before fermentation begins. It is also possible to macerate after fermentation, but gently, so as not to extract the tannins from the seeds, which are greener. Because of its solvent power, alcohol favours extraction.
