Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Homeland of Grüner Veltliner: Austria's signature dry whites, lively, peppery ("Pfefferl"), with notes of citrus, green apple, fennel and fine minerality, from crunchy everyday to great age-worthy bottles on lees. Taut, precise Riesling on the Wachau terraces (UNESCO). Quieter reds: supple Zweigelt with red fruit. Subregions: Wachau, Kremstal, Kamptal, Wagram, Weinviertel.
