Discover the grape variety: Dameron
Simple, rustic reds with a clear ruby colour, soft tannins and an airy palate, showing discreet aromas of red fruits and herbal notes. Formerly destined mainly for distillation into eau-de-vie. Now almost extinct, preserved in INRAE ampelographic collections, a witness to the former diversity of the Charentes vineyard before phylloxera. Old black variety from the Charentes, ancestor of the Cognac vineyard.

The wine region of Cori
DOC from the northern Lepini Mountains in the province of Latina (central Lazio, 9,700 ha). Signature indigenous Bellone — fresh and balanced white with lively notes of white flowers, white fruits, citrus and an elegant mineral-saline touch. Signature indigenous Nero Buono — structured red with intense notes of forest berries, black cherry, plum and a balanced spiced-vegetal touch, firm tannins and ageing potential (Riserva). Malvasia del Lazio and Montepulciano as complements.
The wine region of Lazio
Two-millennia Roman vineyard, predominantly white on the volcanic soils of the Castelli Romani. Frascati DOC as figurehead: fresh, accessible whites based on Malvasia and Trebbiano, notes of green apple, white flowers and almond, slightly bitter finish. Also Bellone and Grechetto. Emblematic red: Cesanese del Piglio DOCG, fleshy with notes of ripe cherry, dry herbs and spice, round tannins.
The word of the wine: Flow
Action consisting of draining the wine from a vat of red wine (free-run wine), the marc then being pressed to obtain the press wine.
