Western Australian wine region in the Southern Forests (Kennan-Queenup sandy loam soils, karri forests, continental climate similar to Bordeaux): Verdelho is the signature white grape, offering fragrant tropical notes. Merlot and Cabernet Sauvignon are the signature reds with structured dark fruit and fine tannins, excellent ageing potential. True winter dormancy, GI 2006, less fertile soils than Pemberton.

Signature Bordeaux Cabernet-Merlot blends in red: deep and refined with notes of ripe blackcurrant, eucalyptus, cedar and graphite, firm tannins and great ageing, often compared to Médoc. Chardonnay rated Australia's best: taut, saline and mineral (lemon, hazelnut, brioche). Lively Sauvignon-Sémillon (citrus, cut grass).

The word of the wine: Rebêche (champagne)

Must obtained in excess of the 2 550 litres authorised for a weight of 4 000 kilos of grapes. The first 2 050 litres constitute the cuvée and the next 500 litres the taille. The rebêche represents 1 to 3 % of the total volume and must be distilled or used to make ratafia.
