Structured, intensely coloured reds with excellent ageing potential, with a deep purple colour, firm tannins and an ample palate, with signature aromas of black fruits (blackberry, plum), spices, tobacco and leather notes. Powerful Balkan profile. Star of the Melnik vineyard in the south-west of the country, it produces the best long-ageing reds of Bulgaria. Indigenous Bulgarian black variety grown in the sunny Melnik region.

The wine region of Illinois

Midwestern US wine state, humid continental climate requiring robust hybrid varieties. Signature Chambourcin in red: fruity and accessible with signature black cherry, raspberry, plum, fresh herbs and a peppery touch, supple tannins and lively acidity — the local standard. Dense, deeply coloured Norton (blackberry, coffee), fruity Frontenac, spicy Foch. Whites: ample Chardonel, honeyed sweet Vidal Blanc, aromatic Vignoles, opulent Traminette, lively Seyval Blanc.

The word of the wine: Maceration

Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
