The wine region of Ancient Lakes of Columbia Valley
Washington AVA (western edge of the Columbia Basin near Quincy, 13th AVA 2012, shaped by Missoula glacial floods, sandy-volcanic soils, dry climate ~150–200 mm/year): Riesling is the signature cool-climate king — crisp notes of lime zest, green apple, slate minerality and naturally high acidity (7–9 g/l). Chardonnay, Pinot Gris and Sauvignon Blanc as complements. Rain shadow of the Cascades produces structured Riesling expression.

Star Cabernet Sauvignon (~60% of reds): powerful and structured with signature notes of blackcurrant, blackberry, cedar, dry herbs and graphite, firm tannins. They are in fact tartaric salts formed by tartaric acid, potassium and calcium naturally present in the wine.
