The wine region of Florina
Greek PGI among the coolest and most mountainous in the country (Western Macedonia, up to 700 m), encompassing the Amynteon plateau. Xinomavro is the signature indigenous red: tannic and sharp with intense notes of dried tomato, black cherry, olive, herbs and a smoky-spicy touch, firm structure and superb ageing potential — often compared to Piedmontese Nebbiolo. Blended with Syrah or Merlot for rounder cuvées. Rosés show taut, acidic red fruits.
The wine region of Macedonia
Large wine region of northern Greece, 1st by volume, altitude vineyards tempered by mountain massifs. Signature Xinomavro ("acid black") as king grape: structured, complex reds with signature notes of tart cherry, dried tomato, black olive, Mediterranean herbs, leather and a mineral touch, firm tannins and long ageing — compared to Nebbiolo. Stars in PDO Naoussa, Amyndeon, Goumenissa and Rapsani. Also lively, mineral Assyrtiko, aromatic Malagousia as whites.
The word of the wine: Viscosity
Consistency of wine reminiscent of the tactile sensation of sugar syrup with varying degrees of fluidity, due to the alcohol and natural sugar in the grapes present in sweet wines. In excess, this sensation can make the wine pasty and heavy. To the eye, viscosity is referred to as tears.
