Xinomavro is the signature indigenous red: tannic and sharp with intense notes of dried tomato, black cherry, olive, herbs and a smoky-spicy touch, firm structure and superb ageing potential — often compared to Piedmontese Nebbiolo. Blended with Syrah or Merlot for rounder cuvées. Rosés show taut, acidic red fruits.
