The wine region of McMinnville

Willamette Valley AVA (Coast Range, ~40 miles southwest of Portland, ~600 acres, uplifted marine sedimentary loams on Nestucca formation): Pinot Noir signature as red king (~84% plantings) — firm tannic structure, dusty dark fruits, spicy mineral and earthy notes. Volcanic and marine soils force vines to struggle for complex fruit. Coast Range rain shadow, drying Van Duzer Corridor winds, dense Pinot identity.

American benchmark for fresh, elegant Pinot Noir. Fine, silky reds with signature notes of red cherry, raspberry, wild strawberry, undergrowth and spice, delicate tannins and taut freshness — the closest style to Burgundy outside France. Iconic Willamette Valley on volcanic (Jory) and marine soils. Also precise, mineral Chardonnay, ample Pinot Gris (pear, honey), taut Riesling.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
