Taut and mineral whites with exceptional cutting acidity and a lean palate, on intense aromas of lemon, grapefruit, green apple, white flowers, smoke and strongly marked volcanic saline-iodine notes. Fine ageing potential. The absolute star of Santorini PDO on the volcanic soils of the Cyclades (vines trained in kouloura baskets to protect against wind). Now exported to Australia, California and South Africa. Native Greek variety.

The wine region of Santorini

Mythical volcanic PDO of the Cyclades (Greece): signature Assyrtiko as king white (>=85%, complemented by Aidani and Athiri) — pale robe and signature direct mineral-saline profile mirroring the volcanic terroir — lively notes of citrus, lemon, grapefruit, white fruits and an iodine touch, sharp acidity at low pH and chiselled structure. Centenary vines in kouloura (basket shielding from wind), phylloxera-free island, intense sun, violent wind, minimal rain.

The word of the wine: Cuvée prestige (champagne)

Vintage or not, it is composed of a selection of terroirs and generally comes from the first press after eliminating the very first juices that come out of the press. The best known? Dom Pérignon, Cristal de Roederer, Grand Siècle de Laurent-Perrie, Louise at Pommery. In fact, all the houses and most of the independent winegrowers have their own prestige cuvee.
