Adds floral roundness to blends. Star of Santorini PDO whites blended with assyrtiko and athiri, and of passito Vinsanto liqueurs. Native Greek variety from the Cyclades (Santorini, Paros).

Mythical volcanic PDO of the Cyclades (Greece): signature Assyrtiko as king white (>=85%, complemented by Aidani and Athiri) — pale robe and signature direct mineral-saline profile mirroring the volcanic terroir — lively notes of citrus, lemon, grapefruit, white fruits and an iodine touch, sharp acidity at low pH and chiselled structure.
