Drought-resistant Attica variety, traditionally used in Retsina (pine-resin wine) and modern dry whites revisited by contemporary producers in Markopoulo and Spata. PGI Thiva of Boeotia in central Greece (south-east, diverse terroir, zone established 2000, legendary birthplace of Dionysus): Savatiano and Assyrtiko lead in whites — aromatic, citrus-driven with minerality, vivid and taut. Mouhtaro is the signature red, a local autochthonous variety enjoying a renaissance since the 2010 revision. Cabernet Sauvignon adds structure; Athiri, Malagousia, Moschofilero, Chardonnay and Sauvignon Blanc complete the white palette.
