PGI Thiva of Boeotia in central Greece (south-east, diverse terroir, zone established 2000, legendary birthplace of Dionysus): Savatiano and Assyrtiko lead in whites — aromatic, citrus-driven with minerality, vivid and taut. Mouhtaro is the signature red, a local autochthonous variety enjoying a renaissance since the 2010 revision.
