Simple, fresh dry whites with a pale robe, supple palate and moderate acidity, showing discreet aromas of citrus, apple, white flowers, aromatic herbs and sunny notes. Drought-resistant Attica variety, traditionally used in Retsina (pine-resin wine) and modern dry whites revisited by contemporary producers in Markopoulo and Spata. Autochthonous Greek variety from Attica, the most planted in Greece.

The wine region of Viotia

Greek PGI (1989) around Thebes in Boeotia (~3,400 ha), clay-limestone soils on the cool slopes of Mount Kithairon. Savatiano is the dominant autochthonous white signature: dry and taut with intense notes of citrus, stone fruit, white flowers and a mineral touch, vinified dry or as resinous Retsina. Aromatic Roditis as complement. Mouhtaro, an autochthonous red with red fruits and a spicy touch.
