The wine region of Crémant de Limoux
Flagship Languedoc sparkling AOC (1990) in traditional method: signature blend of Chardonnay and Chenin (≤90%, Chenin 20-40%) complemented by Mauzac Blanc and Pinot Noir in white and rosé — fine, persistent bubbles, pale robe with green hints, signature aromas of apple, brioche, hazelnut from Chardonnay, red fruits from Pinot, chiselled freshness and minerality. 15-month minimum lees ageing, finesse compared to Champagne.
The wine region of Languedoc-Roussillon
Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault. Stars: structured Corbières, Minervois, Faugères, Saint-Chinian; round Côtes-du-Roussillon. Legendary vins doux naturels: Banyuls and Maury (fortified Grenache) with notes of cocoa, fig, prune.
The word of the wine: Breeding
It can last for several years. The bottles are stacked in the cellars and waited for the light and heat. The yeasts gradually give the wine compounds that enrich it. A long maturation is a guarantee of quality.
