Refreshing, elegant muscat profile. Star of Mantinia PDO on the high-altitude plateaus of the Peloponnese (600-700 m), sometimes also in sparkling wines. Native Greek variety with a pink skin, one of Greece's great aromatic whites, successfully exported.

The wine region of Faugères

Languedoc AOC on signature Palaeozoic schist, foothills of the Massif Central. Dense, mineral reds dominate: vibrant Syrah with signature notes of blackberry, violet, black pepper, garrigue and a smoky touch, tight tannins. Sun-drenched Grenache (ripe cherry, kirsch, spice), Mourvèdre compulsory for depth (leather, game, liquorice) — the only Languedoc AOC to require it. Carignan and Cinsault in support.

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault. The word of the wine: Malolactic fermentation

Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid. Some producers or wineries refuse this operation by "blocking the malo" (by cold and adding SO2) to keep a maximum of acidity which carries the aromas and accentuates the sensation of freshness.
